Ingredients:

  • 12 large mushrooms, stems removed
  • 1 cup fresh spinach, chopped
  • 1/2 cup feta cheese, crumbled
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon salt
  • 1/4 teaspoon red pepper flakes (optional)
  • 1 tablespoon breadcrumbs (optional, for topping)

Instructions:

  1. Preheat your oven to 375°F (190°C). Prepare a baking sheet by lightly greasing it with olive oil or lining it with parchment paper to prevent sticking.
  2. In a skillet over medium heat, add the olive oil and sauté the minced garlic for about 1 minute until fragrant. Then, add the chopped spinach and cook until wilted, approximately 2-3 minutes. Remove from heat and let cool slightly.
  3. In a mixing bowl, combine the sautéed spinach and garlic mixture with the crumbled feta cheese, black pepper, salt, and red pepper flakes (if using). Mix well until all ingredients are thoroughly combined.
  4. Stuff each mushroom cap generously with the spinach and feta mixture, pressing down gently to guarantee the filling stays in place. If desired, sprinkle breadcrumbs on top for added texture.
  5. Arrange the stuffed mushrooms on the prepared baking sheet and bake in the preheated oven for 15-20 minutes, or until the mushrooms are tender and the tops are slightly golden.
  6. Remove from the oven and let them cool for a few minutes before serving. Enjoy warm or at room temperature.

Extra Tips:

For added flavor, consider adding some chopped sun-dried tomatoes or olives to the filling mixture. You can also experiment with different types of cheese, such as goat cheese or ricotta, for a unique twist.

If you prefer a bit of crunch, feel free to toast the breadcrumbs before sprinkling them on top. These stuffed mushrooms can also be made in advance; simply prepare them up to the baking step and store them in the refrigerator until you’re ready to cook.

Enjoy your delicious and healthy appetizer!
