You can add your favorite toppings and vegetables, such as cherry tomatoes, corn, or black beans, to enhance the flavor profile and nutritional value.
The combination of grilled chicken and avocado creates a luscious texture, while a zesty dressing ties everything together beautifully. Enjoy this bowl as a light and revitalizing meal that the whole family will love.
Ingredients:
- 2 boneless, skinless chicken breasts
- 2 ripe avocados, halved and pitted
- 4 cups mixed salad greens
- 1 cup cherry tomatoes, halved
- 1/2 cup corn (fresh or canned)
- 1/4 cup red onion, thinly sliced
- 1 tablespoon olive oil
- 1 teaspoon chili powder
- Salt and pepper to taste
- Juice of 1 lime
Instructions:
- Preheat your grill or grill pan over medium-high heat. While the grill is heating up, season the chicken breasts with olive oil, chili powder, salt, and pepper, ensuring they’re evenly coated.
- Once the grill is hot, place the chicken breasts on it and grill for about 6-7 minutes on each side, or until the chicken reaches an internal temperature of 165°F (75°C) and has nice grill marks. Remove the chicken from the grill and let it rest for a few minutes before slicing it into strips.
- While the chicken is resting, prepare the avocados by scooping out the flesh and slicing it into thin pieces. You can also keep the halves intact for a beautiful presentation.
- In a large mixing bowl, combine the mixed salad greens, cherry tomatoes, corn, and red onion. Toss these ingredients together gently to combine.
- To assemble the bowls, divide the salad mixture among four bowls, top each with sliced grilled chicken and avocado. Squeeze fresh lime juice over the top for added flavor and freshness.
Extra Tips:
For added depth of flavor, consider marinating the chicken in your favorite dressing or spices for a few hours before grilling. You can also swap out the salad greens for other options like spinach or arugula. If you prefer a creamier dressing, a drizzle of yogurt-based dressing or ranch can complement the flavors well. Enjoy your delicious and nutritious meal!
